Red pigment obtained by extracting and purifying the pigment produced by red yeast using aqueous alcohol.

"MNS" is a pigment with excellent dyeing properties as a red pigment. It provides sufficient adhesion when applied to the surface of protein-rich foods, with minimal leaching or penetration, and is used in various foods such as crab kamaboko. When used in food, it presents a slightly purplish red color (the color of fish sausage) in cases of mixing or blending.
